I hardly ever bake cakes, but one I like is a white cake and you melt some jelly and pour it in a swirl on top before baking.
And something my mom discovered, icing cakes with pudding is really good. (Especially if you're not an icing fan)

My favorite cake recipe is "Deep Dark Chocolate Cake" which is or was on the side of the Hershey unsweetened cocoa can. It is so moist that you can skip the frosting if you want to. You add 1c. of boiling water to it, makes a 'soupy' batter but the results are great. (this is not a good recipe if you want to 'lick the beaters' like I do! Mmm, I love cake batter!) chocolate frosting is a good choice but my favorite is homemade peanut butter frosting. (NOT the store kind) I never have been able to make mine as good as my Mom's....It is about 2c. peanut butter mixed with about 1/2 lb. powdered sugar & only about 1-2 T. of milk to thin it. Too much milk makes a difference. It is very physical stirring in all the p. sugar. That's why I hardly make it...But I do love it. Pine Nut’s PhotoBucket

OMG PINE....I used to make that for hubby #1, it was his favorite. You're right about the batter being soupy but when it's done it's like have a 'gooey ooey' middle...YUMMO. As for picking favorites....First one is called a 'Casada Cake', it's a rich white cake (different seasonings) that has 3 layers, the first layer (or filling) is a decadent chocolate/espresso filling and the second layer (filling) is that very similar to a canolli. Then it's frosted with (of course a very rich) homemade frosting with real almond extract. I think I just gained a few pounds writing that! The second is a spring/summer time cake. Alot of you know it as the "Jello Cake" with the whipped cream / Cool Whip frosting. The flavors that are my fav are lime & raspberry....MMMMM. Nicky what is an 'upside down' German cake...it sounds interesting and good too and I love that phrase about your tongue! My goodness they all sound so dam good...do we really have to pick favorites? For the German Chocolete upside-down cake You need: 1 German Chocolete cake mix, mixed according to directions.* 8 oz. Cream Cheese 1 stick Margerine 1 lb. Confectioners sugar 1 C ea. fine ground pecans and cocoanut. ( original receipe calls for 1/2 C. Some people want more some want less. Adjust to taste) Instructions: In a mircowaveable bowl , one with a handle is better., cut cream cheese and Margerine in chunks, zap 1 to2 minutes at a time stiring each cycle, until mix is completely melted leave in mircowave until needed to keep melted just before using zap a few mor secends to be sure it will pour. In 9 X 11 Baking dish lined with foil or parchment or If you want to leave in pan, omit lining, spray with Pam. Spread ground Pecans in pan, Spread cocoanut on pecans. Add prepared cake mix to baking pan and be sure it is level. Be careful not to move pecans and cocoanut. Now comes the good part. Stir sugar into cream mixture*, Be sure it will "drizzle". cover the top of unbaked cake with this mixture. Bake at 350 degrees for 45 minutes, or until it almost stopsshaking in the middle. If you bake it until it is done like other cakes it may be dry around the edges. For dark pan bake @325. Good warm, Cold Or after it has been frozen. This is not a cake to make for looks. *I use a hand mixer to mix both. Just rinse beaters between. If you can't understand something sing out. ** An up-side-down cake is one with the top on the bottom. I'm not Old, I've just been young for a very long time. Nicky i'm one of those people that will admire a 'decorated cake' and wonder 'how did they do that' and then DIVE IN and enjoy it LOL. Most cakes aren't really for admiring but tasting and devouring their goodness, so if it doesn't look good, close your eyes when you take the first bite then eating with your eyes open won't matter ; ) Janel aka ScootchieGAINESVILLE - NORTH CENTRAL FLORIDAEveryone needs an Angel,...at least one Scootchie's Photobucket

I've just passed through mostly the past week and missed seeing this. I agree KathyThey are all good some are just gooder than others. I made wedding cakes for many years. Had to stop because I couldn't stop eating the icing and my sugar would go through the roof! I'm not Old, I've just been young for a very long time.

I bake and sell decorated cakes from my home, everyone says "It's too pretty to eat", well, I baked the cakes for 20 years before I started to decorate them! They taste as good as they look. Just wanted to tell you I appreciate your reply very much! Delilah.

Chocolate fudge cake w/ peanut butter buttercream is my new favorite cake. I recently made it for my son's 8th birthday. I made it look like a pizza. He had a make your own pizza party. The crust was the peanut butter buttercream, the sauce and pepperoni were red marshmallow fondant and the cheese was buttercream icing. This cake was awesome. I got so many compliments on it. Everyone thought I had it made professionally. I even put it in a pizza box tha I had my dad get froma local pizza place. It was so cute. All the recipes that I used for this cake were on wilton.com. Pictures of the cake are attatched. For an everyday type cake I wouldn't do all the extra stuff. I would just make the peanut butter buttercream icing to top the chocolate fudge cake. Pine, There is a great peanut butter buttercream icing that is really easy to make at wilton.com. It is easy to stir and delicious. NO cooking, just mixing!

Those are so cute and very creative as well. If I had the ability to work with fondant, i'd probably go one step further and make very skinny strips of green & yellow (peppers). I just found out that my son's best friends wife is a pro when using fondant, i'll have to pass this idea on to her if she ever needs to make a childs (or even adult) cake....now you know we're allowed to do this right....once you post an idea, it's 'up for grabs' Janel aka Scootchie GAINESVILLE - NORTH CENTRAL FLORIDA Everyone needs an Angel,...at least one photobucket.com/albums/u280/Scootchie2

Belle, Your cakes are beautiful! And fun! And Awesome! I love all of your cakes! I have always enjoyed baking and never was able to take it to the professional level any higher than the Wilton decorating classes. All the different types of cakes you made for each decorated cake sounded so gourmet and delicious. I am inspired to let my creativity flow a little more. I haven't decorated a cake for years since I don't have any decorating supplies anymore. Just basic boxed cakes decorated with fruit, pudding, and simple decorations. Thanks for sharing. I may contact you sometime to get a recipe for a cake if you don't mind. Thanks again, Sabrina
